Combine 6 cups torn frisee leaves, 4 cups diagonally cut Belgian endive, and 1 cup thinly sliced radicchio in a large bowl.</p> <p>2. Cook bacon in a large skillet over medium heat until crisp.  Remove bacon from pan, reserving drippings; crumble.</p> <p>3. Add 1/4 cup chopped shallots to pan; cook 30 seconds stirring constantly.</p> <p>4. Remove from heat; stir in 2 tablespoons champange vinegar, 4 teaspoons maple syrup, 1 teaspoon extra-virgin olive oil, 1 teaspoon dijon mustard, salt and pepper to taste.</p> <p>5. Poach an egg for each person eating.</p> <p>6.
